Grilled Halibut is another one of my favorite summer dishes. This recipe looks so simple you might think it doesn’t have much flavor but it’s deceptively delicious!

Grilling is our favorite way to cook fish. We tend to eat a lot more fish in the summer because of that. There’s nothing like grilling fish and dining al fresco on a warm summer evening.
However, as you may know if you love fish too, it can be expensive. The primary way I address that is to buy it when it’s on sale. We buy most of our fish at the Whole Foods fish counter so every week I look at the ad and see if there’s a fish we like on sale, then plan my menu around that. If you’re an Amazon Prime member you usually get an additional discount and the savings can really add up. In any case, it’s still less expensive than getting the same dish at a restaurant.

Love, love, love this dish! This is one of my favorite grilling recipes. Halibut is a delicious fish, the prep is super quick, and fish is really healthy. This is a restaurant-worthy dish. I highly recommend it!

We like to serve this with an air fryer baked potato or pesto farro and a grilled vegetable like asparagus or broccolini

Ingredients
- 4 Thick-cut halibut fillets
- 1/3 cup Olive oil
- Kosher salt and pepper, to taste
- Fresh chopped parsley for garnish optional
- Lemon wedges for serving
Instructions
- Pat fillets dry with paper towels, brush with olive oil and season with salt & pepper
- Heat gas grill to about 400 degrees. Clean and oil grates.
- Place fish on grill and cook until spatula can be slid under fish easily, about 5 minutes
- Flip fish and cook about 3-5 minutes more, until fish flakes easily with a fork and instant read thermometer reads 130 – 135 degrees.
- Transfer to platter, let rest about 5 minutes. Squeeze lemon juice over fish and garnish with fresh parsely.
