Ground Turkey Taco Cabbage Skillet

We love Mexican food at our house and it’s usually on the menu once a week. This Ground Turkey Taco Cabbage Skillet is a favorite. It’s super easy to put together and like all my favorite recipes, requires no chopping. I like to pair it with a Mexican chopped salad and of course, chips and salsa. You can also eat it with tortillas and add any number of other taco toppings like shredded lettuce or sour cream but it’s also great just as it is.

  • Ground Turkey: Ground Turkey works especially well in this recipe since you add plenty of spice with the taco seasoning and Rotel.
  • Coleslaw Mix: Coleslaw mix is one of my favorite timesavers for a healthy skillet meal
  • Tomatoes: Rotel is my favorite brand of diced tomatoes with green chilies, but you can use any brand. Use your preferred brand of tomato sauce too.
  • Taco Seasoning: I like to buy the big containers of taco seasoning mix since we use a lot of it. Since ground turkey doesn’t have as much flavor as ground beef, I usually use a little more taco seasoning.
  • Shredded Cheese: Any blend of cheddar cheese works in this. If you like even a little more kick, mix with some pepper jack cheese.

Preparation Steps for Ground Turkey Taco Cabbage Skillet

  • Brown ground turkey and drain if needed
  • Add all other ingredients except cheese and stir well.
  • Cover and cook on medium to medium-low heat for about 20 minutes, stirring occasionally, until cabbage is the desired tenderness
  • Top with shredded cheese and cover for about 3 minutes to melt cheese.

  • You can use substitute any ground meat for the ground turkey
  • If you want even more flavor/spice you could add fresh or canned jalapenos
  • Top with shredded lettuce, more shredded cheese, sour cream, olives, cilantro or anything you desire.

Ingredients

  • 1 pound ground turkey
  • 15 ounce can black beans, drained & rinsed
  • 14.5 ounce can Rotel tomatoes undrained
  • 8 ounce can tomato sauce
  • 4 Tablespoons (or one packet) taco seasoning mix
  • 14 ounce package coleslaw mix
  • 3/4 cup shredded cheese (cheddar, pepper jack, Mexican) or any combination

Instructions

  • In a large, deep skillet brown ground turkey until cooked through and drain
  • Add Rotel, tomato sauce, beans, seasoning mix, and stir well. Add coleslaw mix and fold/stir into sauce ingredients.
  • Cover and cook on medium heat for about 20 minutes or until cabbage is desired texture. You may need to add a couple tablespoons of water as it's cooking to help steam the cabbage.
  • Remove lid, top with cheese, and replace lid. Cook for about 3 more minutes until cheese is melted.

Notes

Coleslaw mix makes this an especially easy weeknight recipe. 
I like to buy taco seasoning in bulk and then measure it out as needed for various recipes since we tend to like a bit more flavor and it is more economical to buy it this way if you use a lot of it (which we do!).
