This is a streamlined version of the popular internet recipe for Egg Roll in a Bowl that uses ground chicken or turkey and short-cut ingredients to make this an even easier weeknight meal

I’ve tried a lot of different egg roll in a bowl recipes over the years. The basic premise is the same for all of them: ground meat, cabbage, and a soy-based sauce. We prefer ground chicken or turkey for the ground meat. I always use bagged coleslaw mix for this dish and many recipes call for that. I like the sauce in this recipe best but it can be made even easier if you use a jarred sauce. A teriyaki sauce would work great (I like Trader Joe’s Island Soyaki) or even something like Trader Joe’s General Tsao stir fry sauce would be great. Experiment and do what’s best for you. There are no right or wrong ways to make a meal!

  • Brown the ground meat
  • While the meat is cooking, mix together the sauce ingredients
  • Once meat is browned, add coleslaw mix and sauce to pan, and sauté until cabbage is as tender as you like. If you like your coleslaw really tender, cover the pan while cooking.
  • Make a well in the center and add the egg, scramble, and mix with other ingredients
  • Serve with a siracha mayo and extra soy sauce if you like

I like that this is a healthy dinner that only requires a few ingredients and is ready in very little time. The sauce is also highly customizable so you can tweak it to see what works for you, or use your favorite jarred sauce.

SUMMARY:

While you’ll need to plan for this dish during your weekly meal planning since the coleslaw mix should be bought fresh, it’s a great tasting dinner that comes together super quick. If you make your own sauce you have more control over the nutrition, especially the sodium content. This one is in my regular stir-fry rotation, especially when I know I’ll have a night where I want to do very minimal prep (which is most nights to be honest!).

Ingredients

  • 1 pound ground chicken or turkey
  • 14 ounce package coleslaw mix
  • 1 egg

Sauce Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 teaspoons Siracha or chili garlic sauce
  • 1 Tablespoon sesame oil
  • 1 cube frozen crushed garlic or 1 tsp jarred or 1 clove minced garlic
  • 1 cube frozen crushed ginger or 1 tsp ground ginger

Instructions

  • In a large skillet, brown ground chicken or turkey over medium heat until fully cooked
  • Mix together sauce ingredients
  • Add coleslaw mix and sauce to skillet and saute over medium heat until desired tenderness. Add a little water to skillet if needed for saute. I like to cover it to soften the cabbage.
  • Make a well in center, add the egg, and scramble until done over low heat. Stir to mix.
  • When serving, you can drizzle with a mayo/siracha dressing if you want (mix siracha with mayo to desired spiciness – add a little milk if needed to reach drizzle consistency)

Notes

Make it easier/faster:
Substitute a prepared sauce such as Trader Joe’s Island Soyaki or General Tsao Stir Fry Sauce for the sauce ingredients.  Will save about 5 minutes
Take it up a notch:
Use fresh garlic and fresh ginger in place of the frozen.  Will slightly improve the flavor.  Adds about 5-10 minutes.
