Chicken Egg Roll in a Bowl

Easy, quick, and healthy cabbage and ground turkey stir fry

Ingredients

  • 1 pound ground chicken or turkey
  • 14 ounce package coleslaw mix
  • 1 egg

Sauce Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 teaspoons Siracha or chili garlic sauce
  • 1 Tablespoon sesame oil
  • 1 cube frozen crushed garlic or 1 tsp jarred or 1 clove minced garlic
  • 1 cube frozen crushed ginger or 1 tsp ground ginger

Instructions

  • In a large skillet, brown ground chicken or turkey over medium heat until fully cooked
  • Mix together sauce ingredients
  • Add coleslaw mix and sauce to skillet and saute over medium heat until desired tenderness. Add a little water to skillet if needed for saute. I like to cover it to soften the cabbage.
  • Make a well in center, add the egg, and scramble until done over low heat. Stir to mix.
  • When serving, you can drizzle with a mayo/siracha dressing if you want (mix siracha with mayo to desired spiciness - add a little milk if needed to reach drizzle consistency)

Notes

Make it easier/faster:
Substitute a prepared sauce such as Trader Joe's Island Soyaki or General Tsao Stir Fry Sauce for the sauce ingredients.  Will save about 5 minutes
Take it up a notch:
Use fresh garlic and fresh ginger in place of the frozen.  Will slightly improve the flavor.  Adds about 5-10 minutes.
